Study of Preservative Effect of "Propolis" on the Storage Quality of Mashed Potatoes

Abstract : In this study, the possibility of natural antimicrobial compounds, Jordanian Propolis as food preservatives is investigated. The experiment was conducted in the laboratories of basic science-allied medical science, at applied science university during April –July 2013 to optimize the preservative for safe storage of mashed potatoes preparing from fresh boiled potatoes. Approved chemical preservatives have been widely used to preserve foods and increase their shelf life. There are increasing demands of the partial or complete removal of chemical preservatives from foods because of adverse health effect of chemicals. Propolis sample was collected from naour region. The antimicrobial activities of Propolis against several food spoilage microorganisms were examined. Escherichia coli, Bacillus cereus, Candida albicans, and Staphylococcus aurous, as food poisoning microorganisms were chosen. The post-processing development of contaminating microorganisms present in stored mashed potatoes was controlled effectively with 100, 200, and 400ppm of Jordanian Propolis. Among these preservatives, 400ppm honey gum showed better sensory quality attributes in respect of color, flavor, texture and taste during four months of storage at room temperature, which is better than 400 ppm of sodium benzoate preservatives. Antimicrobial effect was tested during storage at 25◦C. When the microorganisms were treated with Propolis, the population of food spoilage microorganisms decreased by 2.6-3.7 log cycles. The inhibitory effect was increased in more acidic condition. Propolis was effective at preventing microbial growth and extending shelf-life.

Chemical Analysis and Biological Activity of Jordanian Chamomile Extracts

Abstract : The Jordanian chamomile (Matric aria chamomilla) has been researched more thoroughly to evaluate its useful properties. It is investigated and found that Jordanian chamomile is rich in phenolic compounds, with beneficial biological activities. By applying the most promising HPLC method, the content of total phenolics in methanolic extract was determined according to the Folin-Clocalteu procedure, and was found (GAE>20 mg/g.) The flavonoid types were found as flavones and flavonolos. The minimum inhibitory concentration values for methanolic extracts of Jordanian chamomile were determined for different kinds of bacteria. The extracts have activity against Staphylococcus aurous, candida albicans, Esherichia Coli, Betula pubescens and Pinus sylvestris. The activity has been observed to be due to the tannins and a pigenin present in the extract. To utilize these significant sources of natural compounds, further characterization of phenolic composition is needed.

Chemical Investigation and Preservative Effect of Jordanian Nigella Sativa L. Seed Oil on Date Paste

Abstract : One of the miracle herbs plant that has been considered as prophetic medicine is Habbatus sauda (Nigella Sativa). Nigella sativa also known as Black seed is an annual herbaceous plant and it is indigenous to the Mediterranean region. HPLC showed that Jordanian Nigella Sativa contain a variety of pharmacologically active substances like thymoquinone, dithymoquinone, thymol, carvacrol, nigellicine-N oxide, nigellidine and alpha-hederin. The effects of Nigella sativa oil (100-400ppm) on poisoning and pathogenic bacteria were examined. Nigella sativa L and its various extracts were found to possess antibacterial activity against gram positive and gram negative bacteria, and they caused inhibition of Staphylococcus aureus, Enterobacteriaceae, and Enterococcus faecalis. Nigella sativa L., was tested for a possible antioxidant activity, showed that thymoquinone demonstrated respectable radical scavenging property. Biological Activities of the Methanol Extract of Cultivated Jordanian Fresh and Dried Mint Species (Mentha Longifolia)

Abstract : The essential oil of mint species is widely used in food, pharmaceutical and cosmetic industries, growing throughout the world. Therefore, it is very important to know the chemical characteristics of the fresh and dried oil for economic use and enhanced performance of the end products. This study was carried out to determine mineral content, essential oil chemical composition, antimicrobial and antioxidant activities of essential oil of Jordanian fresh and dried cultivated mint species (Mentha longifolia) It is found that the mint oil is a greenish yellow with acid value of 0.83, relative density of 0.912, and a refractive index of 1.451. The effect of the microwave drying method on the content of volatile compounds were estimated. HPLC analysis of the essential oil identified 20 and 16 compounds of the oil from fresh and dried, respectively. It was determined that essential oil of Mentha longifolia contains pulegone and isomenthone as major components, in both fresh and dried mint leaves. Treatment of the oil exhibited strong antimicrobial activity against Escherichia coli, Bacillus cereus, Candida albicans and Staphylococcus aurous. Antioxidant activities of the oils were the same for both dry and fresh M. longifolia against DPPH (IC50 = 9 and 10 μg/ml, respectively) and 2-fold and 4-fold higher than shoot extracts (IC50 = 20 and 48 μg/ml, respectively). Moreover. In the same way, the capacity to inhibit superoxide anion was very significant for the two oils (0.1 μg/ml for M. longifolia). The antioxidant activity of essential oil of mint species lowered DPPH activity compared to ascorbic acid.

Teucrium polium″ Extracts Jordanian Ja’adeh

Abstract : This research is intended to record the possible variations in the constituents, chemical composition and antimicrobial activity extracts of cyclohexane, dichloromethane and ethanol extracts of Teucrium polium (Jordanian Jeadaha). That collected on locality Almojub Valley (southern deserts of Jordan). Cyclohexane extracts of T. polium possessed high activity against Bacillus subtilis (MIC = 65 μg/mL Dichloromethane extract was more effective against Bacillus subtilis (MIC = 32.5 μg/mL). The ethanol extract of T. polium possessed no activity against Bacillus subtilis. Herb extracts of T. Polium have shown weak antibacterial activity on Pseudomonas aeruginosa, Klebsiella pneumoniae, Escherichia coli and Staphylococcus aurous. The antioxidant activities of the extracts were evaluated using 2 different tests: the thiocyanate method and scavenging of the 1, 1-Diphenyl-2-Picrylhydrazyl (DPPH) radical. The cyclohexane, dichloromethane and ethanol extracts had antioxidant activities. The flavonoid contents of all of the extracts were also determined. The amounts of total flavonoids were higher in dichloromethane and ethanol extracts. The extracts, were subjected to chromatographic methods for the isolation of the active compounds. The structures of isolated compounds were characterized by UV, IR, and 13C NMR, spectroscopic methods as cirsilineol (1), luteolin-7-O-rutinoside (2), luteolin-7-O-glucoside (3), hesperetin-7-O-rutinoside (4), apigenin (5) diosmetin (6), Luteolin-7-sambubioside (7), Diosmetin 7-O-rutinoside, (8) and Nicotiflorin (9) (Fig. 1). These isolated compounds were also tested for their antioxidant and DPPH radical scavenging activities. Flavonoids showed potent antioxidant and DPPH radical scavenging activities. The highest antioxidant activity was shown by luteolin-7-O-glucoside (Djilas et al., 2006). This study found that the total phenolic content of the extracts ranged from 50.0 mg/g to 170.0 mg GA/g. The present results therefore offer a scientific basis for traditional use of Teucrium polium for the treatment of bacterial and fungal infections.

And It was written using Google Forms, and the link was shared through multimedia. The reliability of instrument was determined. Data collected were analyzed using simple percentage and t_test and Anova was used to test the hypotheses. The result collected and analyzed showed that; the majority of study (84.0%) respondents were in the middle age between 29 to 48 years old. Males were accounted for less than one fifth (18.0%) of sample. And we found out through the results teachers with 12 to 22 years of experience found of obstacles of E- learning in comparison with those with the lowest number of years of experience, and that state schools have more obstacles than private schools.

Preservative Effects of Jordanian Sage-oil on Storage Stability of Tamarind Beverage

Abstract : The effect of Jordanian sage-oil on the quality attributes of tamarind beverage during storage was investigated. Tamarind beverages were produced with or without sage-oil (100 mg sage-oil). Tamarind beverage produced according to traditional processing method served as the control. The tamarind beverages were stored for 4 months at room (29 ± 2°C) and refrigerated (4–10°C) temperatures. Samples were analyzed, at regular intervals, for chemical, sensory, and microbiological qualities. Appearance of coliforms or overall acceptability score of 5.9 was used as deterioration index. The control beverages deteriorated by 2nd and 10th days at room and refrigerated temperatures, respectively. Tamarind beverage produced without the inclusion of sage-oil was stable for 3 and 5 weeks at room and refrigerated temperatures, respectively. Sage-oil extended the shelf life of the tamarind beverage to 6 - 13 weeks, respectively ike oil-sage have been used since ages to preserve food stuffs. [4] Sugars are generally used to preserve fruits or to make jams. While sage-oil is added to dried meats, vegetables, and beverages to preserve them for longer. [5] Sage and sugar act as excellent natural preservatives, as they prevent the bacterial growth through the process of osmosis. Preservatives like sage-oil works as an excellent antioxidant, and prevent the oxidation of foods. Tamarind (Tamarindus indica L.), a tropical fruit found in Africa and Asia, is highly valued for its pulp [6]. Tamarind fruit pulp has a sweet acidic taste due to a combination of high contents of tartaric acid and reducing sugars [7]. The pulp is used for seasoning, in prepared foods, to flavor confections, curries, and sauces, and as a major ingredient in juices and other beverages [7]. This study therefore aimed at investigating the effects of sage-oil on the chemical, sensory, and microbial attributes during storage of tamarind beverage produced by the traditional method.

Synthesis, characterization and antibacterial activity of some 5-aryl-1, 3-Diphenyl 1-4, 5-dihydro-1H-Pyrazoles

Abstract : The condensation of acetophenone (I) with arylaldehyde (II) was investigated and the resulting chalcones 2-Arylidene 1-Acetophenone (III) were reacted with phenyl hydrazine and acetic acid to produce substituted 5-aryl-1, 3-diphenyl-4, 5-dihydro-1H-Pyrazoles (IV). The structures of all products were studied by H-NMR, IR, thermal and elemental analysis. Thermo-gravimetric (TG) and differential thermal analysis (DTA) was applied to investigate the thermal behavior and structure of the synthesized compounds. 2-Pyrazolines (IV) exhibited moderate activity against Streptococcus faecalis ATCC 19433, Klebsiella pneumoniae ATCC 13883, Proteus vulgaris ATCC 25922, Shigella sonnei ATCC 25931 and Peseudom oaeruginosa ATCC 27853.

A Study of Preservative Effects of Sesame Oil (Sesamum indicum L.) On Mashed Potatoes

Abstract : Sesame (Sesamum indicum L.) seed and oil have long been used widely as healthy foods to supply energy and prevent aging. Some of the main active anti-oxidative constituents in sesame seeds are γ-tocopherol and phenols. The purpose of this study was to investigate the biopreservative efficiencies of different levels of sesame seed oil on mashed potatoes .Different levels sesame seed oil were added individually or in combinations to mashed potatoes, which was acidified to pH 4.5, before storage at 25°C. Addition of 100ppm, 200 ppm, and 400ppm sesame oils, we discovered that 400ppm sesame seed oil increased the shelf life of mashed potatoes to 49 days, while it was 15 days for the control mashed potatoes without preservatives incubated at room temperature and observed for over two weeks. The results showed that sesame seed oil was more efficient in preserving stored potatoes paste than sodium benzoate. The sesame oil was of good preservatives as microbial growths were observed after 7 weeks of incubative preservation. The result of this study showed that sesame seed oil was clearly superior within the trial duration. Organisms found associated with the spoilage of the stored potatoes paste included fungi such as Aspergillums flavus, A. fumigates, A. Niger and Fusariumspp and bacteria such as Bacillus coagulant.

Chemical Investigation and Biological Activity of Cultivated ArtemisiaJordanica

Abstract : Artemisia species possess pharmacological properties that are used for medical purposes worldwide. In this paper, the essential oils from the aerial parts of cultivated ArtemisiaJordanica, from the southern Jordan desert. A number of analytical methods have been developed for detection and quantification of artemisinin, e.g., thin layer chromatography (TLC) TLC with visible light densitometric detection, high-performance liquid chromatography with UV detection (HPLC–UV), HPLC with electrochemical detection (HPLC–ECD), The main compounds analyzed were pulegone (21.60%) as a major component followed by isomenthone (18.57%), Piperitoneoxid (8.77%), Pulespenone (7.65%), and piperitenone oxide (6.30 %). Additionally, the oils were evaluated for their antibacterial and antifungal activities. The essential oil demonstrated nonselective antifungal activity against plant pathogens. Antibacterial effects assessed by an agar dilution assay demonstrated greater activity of the essential oil against Staphylococcus aureus and Pseudomonas aeruginosa. It is found that the active antimalarial compound obtained from the leaves of Artemisia. Antioxidant capacities of the plants were also tested. Free radical scavenging activity assay (FRSA): DPPH-radical scavenging activity was tested.

A Study Survey of Awareness of Jordanian Chemists about Chemical Hazards

Abstract : This study is an attempt to identify the level of awareness of safety measures practiced in the survey was conducted between September and December 2020 among chemists graduated in Jordan in several working sectors (teaching, Laboratory work and in manufactures). A total of 245 eligible subjects were asked to participate in the study. The majority were females (71.0%), their ages ranged from 18 to 40 years, and most of them were between 18-22 (62.9%). As for educational qualifications, 65% were students. 77.1% of them had a good knowledge of chemistry. Most of the accidents were in the laboratory by females (68%), 78%of the accidents were by females in the household. The age of 18-22 (58.9%) caused most of the accidents in the laboratory. Also, the age of 18-22 (69.9%) caused most of the accidents in the household. 55.5% of laboratory accidents were from students. As result females and students were the major reason for chemical accidents. There is no significant difference in the average attitude towards chemical safety by age. There is no significant difference in the average attitude towards chemical safety as per education .

Abstract : A statistical study was conducted on the impact of the global epidemic of the COVID-19 virus on undergraduate students at the Applied Science Private University in Jordan. The items were divided into five main items; the general knowledge of the epidemic, information among students from a scientific perspective, the impact of the epidemic on psychological and physical health, the impact on academic achievement, and the future expectations. The total number of students was 361 students. The results among the items were positive except for the effect on academic achievement, which was negative. The difference in outcomes between males and females was slight, also, between colleges. However, the difference was clear between the school years, it was found that the higher the student in the academic year, the more cognitive analyzes and awareness of this epidemic. The study found that students had a medium to a high level of anxiety, and the majority of information on this epidemic was obtained by students from social media and not from official authorities. An effective partnership of governments and their educational institutions is must ensure limiting the spread of disease and finding accurate scientific methods to contain problems that arise in society to ensure prosperity

Chemical composition and biological activity of Jordanian saffron

Abstract : The chemical composition and active constituents of Jordanian planted saffron (Crocus sativa L) were studied, to evaluate a natural preservative effect of saffron on food. High Performance Liquid Chromatography (HPLC) studies using photodiode array analyses were performed on a waters HPLC system for the separation of several ingredients from alcoholic extracts of Jordanian saffron. Eight saffron peaks were identified by comparison of their retention times with those of known reference compounds and quantified from samples of saffron as follows: picrocrocin, picrocrocin acid, kaempferol, trans-crocin, trans-crocin-3, trans-crocin-4, safranal and cis-crocin-4. Antimicrobial activity of some heterocyclic derivatives of chalcones

Abstract : The minimum inhibitory concentration values for a group of synthesized 2-Arylidene-1-benzosuberone, their dibromides and their pyrazolines derivatives were determined for gram-positive and gram-negative bacteria and yeast. Some compounds exhibited significant activity against S. aureus, S. epidermidis and B. licheniformis. The structural activity of these compound is discussed. We hope in future to study the effect of these compounds on growth and morphology.

Preservative Effects of Jordanian Sage-oil on Storage Stability of Tamarind Beverage.

Abstract : The effect of Jordanian sage-oil on the quality attributes of tamarind beverage during storage was investigated. Tamarind beverages were produced with or without sage-oil (100 mg sage-oil). Tamarind beverage produced according to traditional processing method served as the control. The tamarind beverages were stored for 4 months at room (29 ± 2℃) and refrigerated (4–10℃) temperatures. Samples were analyzed, at regular intervals, for chemical, sensory, and microbiological qualities. Appearance of coliforms or overall acceptability score of 5.9 was used as deterioration index. The control beverages deteriorated by 2nd and 10th days at room and refrigerated temperatures, respectively. Tamarind beverage produced without the inclusion of sage-oil was stable for 3 and 5 weeks at room and refrigerated temperatures, respectively. Sage-oil extended the shelf life of the
tamarind beverage to 6 - 13 weeks, respectively.

Synthesis of new substituted 2,3,3a,4,5,6-hexahydrobenzo[6,7]cyclohepta[1,2-c]pyrazoles and related compounds

Abstract : Aryl aldehydes I reacted with 1-benzosuberone to yield the corresponding 2-arylidene-1-benzosuberones II. Condensation of II with hydrazine and its derivatives provided the substituted 2,3,3a,4,5,6-hexahydro-benzo [6,7] cyclohepta[1,2-c] pyrazoles III-VI respectively. The structures of all products were assigned by chemical and spectroscopic methods.

Synthesis, characterization and antibacterial activity of some 5-aryl-1, 3-Diphenyl 1-4, 5-dihydro-1H-Pyrazoles

Abstract : The condensation of acetophenone (I) with arylaldehyde (II) was investigated and the resulting chalcones 2-Arylidene 1-Acetophenone (III) were reacted with phenyl hydrazine and acetic acid to produce substituted 5-aryl-1, 3-diphenyl-4, 5-dihydro-1H-Pyrazoles (IV). The structures of all products were studied by H-NMR, IR, thermal and elemental analysis. Thermo-gravimetric (TG) and differential thermal analysis (DTA) was applied to investigate the thermal behavior and structure of the synthesized compounds. 2-Pyrazolines (IV) exhibited moderate activity against Streptococcus faecalis ATCC 19433, Klebsiella pneumoniae ATCC 13883, Proteus vulgaris ATCC 25922, Shigella sonnei ATCC 25931 and Peseudom oaeruginosa ATCC 27853.
